Directions
- Place the potatoes in a saucepan and cover with water. Bring to a boil, reduce the heat, and cook for approximately 12–15 minutes, or until fork-tender.
- While the potatoes cook, pat the chicken breasts dry. If they are especially thick, gently pound them to an even thickness so they cook evenly.
- Season both sides of the chicken with garlic powder, onion powder, smoked paprika, thyme, salt, and black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for approximately 4–5 minutes per side, until golden brown. The chicken does not need to be completely cooked through at this stage. Transfer it to a plate and set aside.
- Reduce the skillet heat to medium. Add the sliced onion and 1 tablespoon butter. Cook for approximately 6–8 minutes, stirring occasionally, until the onions are tender and lightly golden.
- Add 2 minced garlic cloves and cook for approximately 30 seconds, just until fragrant.
- Sprinkle the flour over the onions and stir continuously for approximately 1 minute.
- Slowly pour in the chicken broth while stirring. Add the thyme, parsley, black pepper, and salt. Bring to a gentle simmer and cook for 2–3 minutes, until the gravy begins to thicken.
- Stir 1/4 cup milk into the gravy. Return the chicken and any accumulated juices to the skillet. Spoon some of the onion gravy over each chicken breast.
- Reduce the heat to medium-low, cover, and simmer for approximately 8–10 minutes, or until the thickest part of each chicken breast reaches an internal temperature of 165°F.
- While the chicken finishes cooking, drain the potatoes. Add the warmed milk, butter, garlic powder, salt, and black pepper. Mash until creamy. Add a small splash of additional milk if needed to reach your preferred consistency.
- For the green beans, heat 1 teaspoon olive oil in a separate skillet over medium heat. Add the green beans and cook for approximately 5–7 minutes, stirring occasionally. Add the minced garlic, onion powder, and black pepper and continue cooking until the beans are tender-crisp. Add a tablespoon or two of water and cover briefly if softer green beans are preferred.
- Taste the chicken gravy and adjust the seasoning if necessary.
- To serve, place 1 chicken breast on each plate and spoon approximately 1/4 of the onion & herb gravy over the chicken. Add 1/2 cup mashed potatoes and 1 cup green beans.
- Garnish with fresh parsley and cracked black pepper, if desired. Serve warm.
